Chocolate Cupcakes with Chocolate Frosting

Homemade Chocolate cupcakes that will surely make your kids love to eat. This is perfect when you are preparing for some kiddie party which you can save than buying or ordering from outside.

Ingredients

  • 1/2 cup Cocoa powder ( unsweetened )
  • 3/4 cup flour
  • 1/2 cup White Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Milk
  • 1/4 cup Vegetable oil
  • 1 cup Water
  • 1 1/2 tsp. Coffee
  • 3/4 tsp. Baking Soda
  • 3/4 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 1 tsp. Vanilla Extract
  • 1 egg

Frosting

  • 1/2 cup Butter
  • 3 3/4 cup Icing Sugar
  • 2 tbsp. Milk
  • 1 tsp. Vanilla Extract
  • 1/4 tsp. Salt
  • 1/4 cup Cocoa Powder

Directions

  1. Preheat oven to 180 °C (356 °F)
    Prepare muffin tray with cupcake liners
  2. Sift the dry ingredients together into a large bowl ( flour, cocoa powder, salt, sugars, baking soda and baking powder ) and vigorously whisk.
  3. In a separate bowl, mix together the water with Coffee, Egg, Vanilla extract, Milk and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir. Ladle the butter into the muffin tray with cupcake liners. Filling about two-thirds of the way full.
  5. Place in the oven and bake for 20-22 min. , until a bamboo skewer inserted in the center and comes out clean.
  6. Remove from pan and cool in a rack.
  7. Frosting: beat the softened Butter together with the Icing Sugar, Salt, Milk vanilla Extract and Cocoa Powder. And decorate it yourself 🙂
